Turkey and Dried Fruit Quinoa

- Cook time: 15 minutes
- 1 cup red quinoa
- 2 cups gluten-free chicken broth
- ¾ pound turkey breast, cut into ½ inch pieces
- ½ cup dried cherries or cranberries
- ½ cup chopped dried apricots
- ¼ cup sliced green onions
- ½ cup fresh parsley, finely chopped
- Juice and zest of 1 orange
- Salt and pepper
- In a large saucepan over medium-high heat, combine the quinoa and broth and bring to a boil. Reduce the heat to low, cover the pan and simmer until the quinoa is cooked, about 12 minutes. Remove from the heat and let cool.
- Transfer the quinoa to a large bowl and add the remaining ingredients; toss. Serve warm, chilled or at room temperature.
