Artisan Gluten-Free Flour Blend

- Makes: About 3 cups
- 1¼ cups brown rice flour
- ¾ cup sorghum flour
- ⅔ cup cornstarch
- ¼ cup potato starch
- 1 tablespoon plus 1 teaspoon potato flour
- 1 teaspoon xanthan gum
- In a large bowl, whisk together all the ingredients until thoroughly mixed. Store in an airtight container in the refrigerator.
